In a delicious collaboration with Australian Dessert Diva and brand ambassador Christine Manfield, Byron Bay Cookies in partnership with Bistro Rex is excited to bring to life a Dessert Pop Up, to tantalise guests’ tastebuds for the upcoming release of the new Ginger Spice Cream Cookie.
The pop up will give cookie lovers a preview of a mouth-watering new cookie flavour to be released in September under the Byron Bay Cookies by Christine Manfield range, which combines ginger biscuits sandwiched with a nutmeg spiced fruit mince cream. Crafted in collaboration with chefs Jo Ward and Michelle Powell from the critically acclaimed Bistro Rex, Christine’s Pear & Ginger Spice Crumble dessert will be exclusively available at the Potts Points venue until Saturday August 26th.
Paired perfectly with a glass of 2015 Eric Bordelet Poire Authentique pear cider, the unique dessert combines fragrant layers of ginger poached pears, fruit mince and lemon cream, topped with a decadent crumble mix using Ginger Spice Biscuits from Byron Bay Cookies.
Christine says, “I had a lot of fun experimenting with the flavours and textures of this cookie to develop something Byron Bay Cookies hadn’t done before. I’m pleased to be working with Jo & Michelle from Bistro Rex to bring to life such a delicious collaboration.”

From July 26th until August 26th, guests are invited to visit the pop up at Bistro Rex and be the first to try the limited edition dessert.
A portion of the proceeds from each dessert sold during the month will be donated to Ovarian Cancer Australia, a charity Byron Bay Cookies, Christine Manfield and Bistro Rex feel passionate about.
